On April 24, 2014, the innovative Appleton, WI restaurant will play host to the first Urban Bourbon Dinner, pairing a veritable feast of International cuisine with globally recognized bourbons. As with the many highly successful pairing dinners in the past, Osorio's Latin Fusion creates a full four course meal, each course ideally matched with the perfect bourbon flavored to bring our the best of the dish. Owner and Executive Chef Liborio Osorio works closely with his staff and co-owner Kim Finnell to find the matches made in heaven for each pairing.
"It's a labor of love," stated Finnell. "We are careful to pair the bourbons with the dishes that most complement one another, creating a culinary taste sensation you won't soon forget."
Beginning the evening of delectable dining is an appetizer course of Bacon Wrapped Salmon with a light Bourbon Glaze, paired with the cinnamon and fruity sweetness of Breaking & Entering Bourbon from St. George Spirits distillery, followed by a Sweet & Savory Bourbon Glazed Pecan and Gorgonzola Salad matched to an exotic Penny Packer Bourbon.
"Our Pecan and Gorgonzola salad is something special, the glaze is delicious," added the always smiling Finnell. "That in itself is amazing and when paired with the smooth, oakiness of Penny Packer, the flavor is sensational."
A main course of Sabucco Chicken in Bourbon Sauce, straight from Chef Libo's Osorio family recipes, is paired with the spicy and soft fruit complexity of Hirsch Small Batch Reserve, a hand crafted Kentucky Straight Bourbon. Topping off the evening of culinary creations is the Concha Bourbon Bread Pudding with Bourbon Caramel Sauce along side Colorado's Breckenridge Small Batch Bourbon, rated one of the top three bourbons in the world in 2011 at the International Wine and Spirits Competition held in Chicago.
